Homemade Burrito Bowls
It's no secret that I love to make super easy, one-pot dinners. It's also no secret that I love burritos. So, even though it takes a little more than one pot to make them, homemade burrito bowls are a perfect summer dinner for me to make.
They're also pretty healthy since they're packed with lots of fresh ingredients and I chose to do a vegetarian version since I'm trying to cut back on my meat intake a little bit. But the great thing about burrito bowls is you can customize them as much as you like. Adding ground beef or chicken to these would also be delicious!
- 1 cup cooked rice
- 1 can black beans
- 1 can sweet corn
- shredded cheddar cheese
- shredded iceberg lettuce
- sour cream
The only cooking required here is to heat and season the black beans. Throw some olive oil and a minced garlic clove (or two) into a frying pan and let it cook for a couple minutes. Then add in your black beans with 1/2 cup of water and cumin & paprika to taste. Simmer until all the water has evaporated.
Now all you have to do is build your burrito bowls. This basically consists of putting all the ingredients in a bowl. For me, one cup of rice, one can of beans, and one can of corn made about four bowls, but I deliberately didn't put quantities for anything else because part of the fun is adding as much of each ingredient as you like.
If you'd like to make your own homemade salsa fresca (which I highly recommend over anything store-bought!) just mix together the following:
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1-2 minced garlic cloves
- cilantro & lime juice to taste
Garnish your bowl with some fresh cilantro, a couple wedges of lime, and dig in!
