Perfect Perogies

There really is never a dull moment in my life... This week has been consumed with recovering from my Lasik procedure, computer troubles, Christmas shopping, and the end of term. But for some reason none of these things strike me as interesting enough to write about... In fact, many of them (eye surgery and computer trouble mainly) actually prevent me from writing anything at all. 

So at the end of yet another ridiculous week, I'm having a bad day. A bad hair day. A bad writing day. A bad everything day. And since that's also not interesting enough to write about, here's a post about perogies.

Perogies are among the Top Ten Best Comfort Foods Ever so they're perfect for a Bad Day. Plus, they're so cheap that they're also perfect for a wallet that just bought elective surgery, plenty of Christmas bounty, and has an upcoming tuition payment due. 

The secret to perfect perogies is to boil them first and THEN fry them. This is crucial to achieve optimal fluffy-on-the-inside, crispy-on-the-outside perogieness. Then it's all about the toppings. I'm traditional so my recommendation is to fry up some bacon and onions and pile on the sour cream with fresh green onion or chives.
