Cheddar Green Onion Breakfast Biscuits

These cheddar green onion biscuits have become a major breakfast staple at my house. They're similar in some ways to my jalapeño cheddar cornbread but these biscuits have a much better texture for packing into a lunchbox or making a killer breakfast sandwich. And, like all my favourite recipes, they're quick and easy to make.

  • 2 cups flour
  • 2 tbsp baking powder
  • 1/2 tsp cream of tartar
  • 1/2 tsp white sugar
  • 1/2 tsp salt
  • 1/2 cup cold butter
  • 1 cup grated cheddar cheese
  • 1/3 cup diced green onion
  • garlic butter, to taste

Combine flour, baking powder, cream of tartar, sugar, and salt. Cut in cold butter with a pastry cutter until crumbly. Stir in cheese and green onion. Stir in milk slowly until the dough starts to form a ball. Roll the dough out to your desired thickness. I usually roll it about an inch think since they do puff up a bit after cooking. Cut into circles with a cookie-cutter and place on a greased baking sheet. Brush with garlic butter and bake at 450ºF for 15 minutes.

Enjoy with soup and salad, or slice them up and throw in a fried egg, tomato slice, and a little bacon/avocado for a protein-powered breakfast you can take on the go!
